Gluten Free Sugar Cookies January 2, 2012

My girls love to use their cookie cutters and make cookie shapes for the season!!!  This Christmas was no different and they had a great time making cookies with friends.  I modified a sugar recipe so that it would be gluten free.  It turned out tasty!


1 cup (2 sticks) unsalted butter, softened

1/2 cup sugar

1 egg yolk

1 tsp vanilla extract

1 cup Sorghum flour

1 cup Sweet White Rice flour

1/4 cup Tapioca flour

1 tsp xanthum gum

1/4 tsp salt

Royal icing for decoration

Cream butter and sugar together in large mixing bowl on medium high speed until fluffy.  Add egg yolk and vanilla, mix well.  Add flour and salt and mix on low speed until dough becomes a ball.  Divide the dough into 3 equal-size balls.   Wrap each ball in plastic wrap and refrigerate for at least 2 hours.

Preheat oven at 375 degrees. Line baking sheet with parchment paper.  Remove one ball from the refrigerator and knead it 4 or 5 times on a lightly floured work surface (I use brown rice flour).    Lightly flour rolling pin and roll dough about a 1/4 inch think.  Cut to desired shapes and place on lined baking sheets.  Bake cookies until they are firm and golden on the edges, about 8 minutes.  Let cookies cool completely on wired rack before decorating.
