Gluten Free Vanilla Cake- Version 2.0 December 29, 2011

So I wanted to try a different recipe for vanilla cake- one that rises a little better.  Well, this did just that.  Now, I have  a couple recipes to use!!!!!


1 1/4 Cup Sweet White Rice Flour

1/2 Cup Sorghum Flour

3/4 Cup Tapioca Flour

1 tsp salt

1 tsp baking soda

3 tsps baking powder

1 tsp xanthum gum

4 eggs

1 Cup white sugar

2/3 Cup mayonnaise

1 Cup milk

2 tsps vanilla extract

Preheat oven to 350 degrees.  Grease and rice flour two 8- or 9-inch round cake pans.  Mix the flours, salt, baking soda, baking pwder, and xanthum gum together.  Set aside.  Mix well eggs, sugar, and mayonnaise.  Add the flour mixture, milk, and vanilla.  Mix well.  Spread batter into the prepared pans.  Bake for about 25 minutes or when the toothpick test comes out clean.  Let cool completely before frosting.
