Everyday Eating with Celiac Disease

Living with Celiac Disease

Gluten Free Christmas Experience December 28, 2011

I hope you all had a fabulous holiday!!!!  This Christmas, I was fortunate to have my twin sister’s family over to our house for Christmas.  This was the first time we had her children and mine together on Christmas!!!!!!!!!!!   The 15 minutes of present-unwrapping chaos was priceless!!!  All five girls went crazy with their gifts!  Santa was very good to them 🙂 It was FABULOUS!!!!!!!  We also had a fabulous Christmas Dinner!!  My sister also has Celiac Disease and we quite enjoyed each other’s company as we prepared dinner for everyone.

The Menu:

Christmas Breakfast Casserole

Polenta Pizza (appetizer)

Kale and Cranberry salad

Butternut Squash Soup

Cornbread

Baked Ham

Green Beans Almondine with Sauteed Mushrooms

Garlic Mashed Potatoes

Creamed Spinach

Gingerbread

Pumpkin Pie

Apple Pie

It was a tasty feast!!!  Everyone was quite content and enjoyed the meal.  As with any holiday feast, there are always leftovers.  This year, it was latkes with ham (obviously, not kosher!).  Recipes will be listed…  I hope everyone enjoyed their holiday feast!!  I can’t wait for next year!!!!!!!
