This is a nice and gourmet alternative to pizza bites!!!

Ingredients:

Roll of precooked polenta

About 4 Roma tomatoes

Shredded mozzarella cheese

Calamata olives

Basil leaves

Olive Oil

Preheat oven to 300 degrees.  Slice the polenta about 1/4 inch thick and place on parchment paper on a baking sheet.  Brush each polenta round with olive oil.  Assemble each polenta round with a layer of cheese, thinly sliced tomato, basil leaf, and sliced olive.  Bake in oven for about 15 minutes or until cheese is melted.
