Gluten Free Gingerbread December 12, 2011

Gingerbread is one of my favorite holiday desserts!  So, I was eager to try making it gluten free.  I’ve made it twice already!!!!!!  It’s surprisingly really moist!


1 Cup Sorghum flour

1 Cup Oat flour (gluten free of course)

1/4 Cup Tapioca starch

1 tsp Xanthum gum

1 1/2 tsp baking soda

1 tsp ground ginger

1 tsp cinnamon

1/2 tsp of salt

1 Cup hot water

1/2 Cup molasses

1/2 Cup honey

1/2 Cup (1 stick) unsalted butter, melted

1 large egg

1/2 Cup sugar

Preheat oven at 350 degrees.  Grease and flour a 9-inch square baking pan or line bottom with wax or parchment paper.  In a separate bowl, combine flours, tapioca starch, xanthum gum, baking soda, ginger, cinnamon, and salt.  Set aside.  In another bowl, whisk together hot water molasses, and honey.  Set aside. In a mixing bowl, combine butter, egg and sugar.

Add the dry ingredients and liquid ingredients alternately to the butter mixture, whisking well after each addition.  Pour batter into a prepared pan.  Bake for about an hour, or until toothpick test comes out clean.  Let the cake cool in pan.
