Gluten Free Pancakes November 27, 2011

My girls love their pancakes every weekend!!!!!  Typically, I always bought Pamela’s brand pancake mix just for the convenience.  Well, I was all out of the mix so I had no choice but to make it from scratch!!!!  It was a success!

1/2 C Sorghum Flour

1/4 C Brown Rice Flour

1/4 C Sweet White Rice Flour

1/4 C Tapioca Starch

2 tsp GF Baking Powder

1/2 tsp Xanthum Gum

2 Tbsp Sugar

2 Eggs

3/4 C Milk

2 Tbsp oil


In large bowl, combine all dry ingredients.  Set aside. In a separate mixing bowl, beat eggs, milk, and oil until combined.  Add dry ingredients and beat until smooth.

Heat greased griddle over medium-high heat.  For each pancake, pour a 1/4 cup batter onto the prepared griddle and cook for about 3 minutes or until the bottom ids deep golden brown and the top surface wrinkles around the edge.  Turn and cook the other side for about 1-2 minutes.  Repeat with remaining batter.
