Gluten Free Blueberry Muffins November 13, 2011

Prior to this recipe, I haven’t been a big fan of blueberry muffins.They were often too dry. Surprisingly, this recipe isn’t

and it’s gluten free!!!  Yummy!!!


2/3 C Almond flour

2/3 C Sweet White Rice Flour

1/3 C Tapioca Starch

1/2 C Sugar

1 Tbsp Baking Powder

1 tsp Baking Soda

1 tsp Xanthum Gum

2 Eggs

1/4 C sour cream

1/2 C Milk

2 Tbsp oil

3/4 cups of fresh blueberries

1/2 tsp vanilla extract

1/2 tsp almond extract

In a large bowl, combine all dry ingredients.  In a separate bowl, mix together eggs, oil, vanilla and almond extracts, sour cream and milk.    Add blueberries. Gradually mix the dry ingredients into the blueberry mixture.  Using a spoon, fill muffin pan (makes a dozen muffins).  Let stand for 30 minutes.  While standing, pre-heat oven to 350 degrees. Bake muffins for about 20 minutes until toothpick is clean.    These muffins freeze well.
