I made this dish tonight, but unfortunately, I didn’t think to pay attention to what I was actually doing. But, here goes..
Cooked long grain rice (I cooked mine in broth, but you can cook in water)
1 1/2 C cooked chicken breast (chopped)
~2 T butter
~2 T GF flour (or 1 1/2 T pure corn starch)
~1 C broth
~1/2 C sun-dried tomatoes
~1/2 C Asiago cheese (shredded)
While your rice is cooking, make a rue with the butter, flour, and broth. Add chicken and tomatoes. Stir on low. Stir in cheese. You may need to add more broth depending on your desired consistency. This dish can be served in a couple of ways. Pour the chicken mixture over the rice. Or, blend the rice with the chicken mixture. Also, this may be tasty with pine nuts.
