Here is my version of GF Orange Coconut Muffins:
2/3 c all purpose GF flour (rice based with potato or tapioca starch)
2/3 c Garbanzo bean flour
2/3 c Almond Flour
1/2 c granulated sugar
1 tsp Xanthum Gum
1/4 tsp salt
3/4-1 c sweetened coconut
1 egg white
1/4 c canola oil
2 T orange zest
1 c orange juice
In large plastic bag combine flours, sugar, baking powder, xanthum gun, coconut, and salt.
In a separate bowl, beat egg, egg white, oil, orange zest, and orange juice until combined. Add dry ingredients.
Spoon batter into prepared muffin cups. Let stand for 30 minutes. Meanwhile, preheat oven at 350 degrees.
Bake for 20-25 minutes until tester inserted in the center of a muffin comes out clean. Let cool for 5 minutes.
These muffins freeze well.
