Glazed Pork on Rice December 29, 2009

I have the most wonderful husband.  He made me this dish based on meal I use to make prior to my CD diagnosis.  It replaces soy sauce (which contains gluten) with his special concoction.  Super Yummy!!!  Of course, serve this with a veggie!  Our family prefers peas or broccoli.  Here you go…

Serves about 4

Ingredients:

1 ½ lbs boneless pork chops

2 T of Extra Virgin Olive Oil (two loops around the saucepan)

a couple sprigs of rosemary or about a small palm of dried rosemary

2 tsp of Kosher salt

1.5 tsp of freshly ground pepper

4 cloves of garlic chopped

1 shallot chopped

Sauce:

3 T unsulphured molasses

1 C apple cider vinegar (if you have gluten free balsamic vinegar, that would taste great as well)

¼ tsp of kosher salt

¼ tsp of ground ginger of 1 tsp of fresh grated ginger

 2 cups of cooked Jasmine rice

Sprinkle salt and pepper onto pork.  Saute garlic and shallot until translucent in medium pan.  Cook pork in pan with rosemary over medium heat.  Cover.  While the pork is cooking, prepare the sauce. 

In small bowl, mix vinegar, molasses, salt, and ginger.  Place about ¾ C of sauce in the pan with the pork and continue to cook until the juices of the pork is clear.

Cut pork into thin slices and place over bed of rice.  Pour remaining sauce over pork and rice.
